Rainy days and cookie thieves

I made s'mores cookies yesterday. Probably the best idea I've had this weekend. Somebody seems to agree with me.

I placed a chock full of graham crackers in them. It seems crazy, but it actually makes sense.


That is also oozing bits of chewy marshmallows.


It is just so delicious, according to this little boy.

Chocolate coma.



S'mores cookies

Preheat oven to 350F

Ingredients
3 eggs
1 1/2 cup sugar
4 ounces semi-sweet chocolate squares
1/2 cup butter
2 tsp baking powder
2 tsp vanilla extract
2 1/4 cup all purpose flour
2 tbsp oil
2 tbsp dark chocolate cocoa
1/4 tsp salt
1 cup crushed graham crackers
1 1/2 cups mini marshmallows

Melt the butter and chocolate together. I just microwave mine for 2 minutes, stirring every 2 minutes. Let it cool for a few minutes.

Afterwards, add the eggs, sugar and oil. With a mixer, beat until the mixture is well blended and thick resembling fudge, add vanilla and beat again. Add the flour, baking powder, salt and dark cocoa and mix again until dough has formed. Fold in the graham crackers and marshmallows until well combined but avoid over-mixing. Refrigerate the dough for 30 minutes.

Line baking sheets with parchment paper. Roll 1 inch size balls using a spoon (or I use and ice cream scoop) and place 2 inches apart on the baking sheet. Flatten a little bit to help the cookies spread in the oven. Bake for 10-12 minutes and place on cooling rack afterwards.

I personally think the cookies were better straight out of the oven or the next day--- but I can also just be weird like that. Enjoy!
